Cheshire cheese, Willington apple & Garden Sage Strudel with a Gin, Vimto & Toasted Almond Dressing

Ingredients

200g Real Cheshire cheese grated

1x Russet style apple- crispin are my favourite- cored and diced into small squares

Small bunch of sage leaves chopped

1 tspn English mustard

2 sheets of rolled puff pastry- cut in half

2 eggs- beaten

Large pinch of black poppy seeds

75ml of Hunters Cheshire Gin

75ml undiluted Vimto

30ml cider vinegar

50g brown sugar

30g flaked almonds

Pinch of all spice

Pinch dried chilli flakes

Method

Strudel

• Mix cheese, sage & apple together and form into 4 ‘sausage’ shapes on one end of the pastry

• Brush inside of pastry very lightly with mustard

• Roll pastry and tuck sides in to form a strudel

• Place on a baking sheet and leave in the fridge to chill

Dressing

• Heat sauté pan and add the gin, vinegar & sugar and cook down until it becomes a syrup.

• Add the Vimto & spices and reduce again

• Brush strudel with egg and dust with poppy seeds, bake for 10-14 minutes on medium in oven

• Serve with griddled Cheshire asparagus
