Savoury spiced minced beef lettuce wraps


(Serves 2)


Ingredients

lb minced beef
1 Iceberg lettuce, cut in half with centre removed and outer leaves left for wrapping
1tbsp fish sauce
1 tbsp honey/syrup
1 tbsp sugar
3 cloves garlic, coarsely chopped
1 stick lemon grass, finely chopped
1 Thai chilli, finely chopped
Spanish onion, diced
2 spring onion, finely chopped
1 tbsp crushed peanuts, coarsely crushed


Method

Heat wok with one tbsp of oil. Make sure cooking area of wok is covered with oil, this ensures a non stick surface.

Once oil begins to smoke, reduce to medium heat and add mince beef. Stir fry until mince is half cooked then add diced onions, add soya sauce and cook
together until mince is cooked, (approx 1 to 2 minutes).

Remove from heat and place cooked mince and onion in colander/sieve to drain off excess oil and juices from meat and onions.

Reheat wok and add 1 tbsp of oil to create non-stick surface and drain off excess oil.

Reduce heat and add garlic, lemon grass and Thai chilli - stir fried briefly to bring out the flavour and aroma of the garlic and lemon grass before adding minced and onions.

Mix in the sugar, fish sauce and honey.

Finally remove from heat and mix in crushed peanuts and spring onions.

Serve into small baskets of iceberg lettuce
