Cloud23 Bar at the Manchester Hilton share their recipe for Mr Mercer’s Cotton Peculiar cocktail

Invented by Lancashire chemist John Mercer (1791 – 1866), mercerisation – treating cotton with caustic soda to give it a smooth silken sheen – is a process still used today.




Light Havana Club Rum blended with spiced syrup

Passion fruit and ice-cream, fluffed up with ginger beer.

Candy floss: optional.
