Ingredients

  • 4 jacket potatoes, scrubbed
  • 500g raw shelled prawns, fresh or frozen, any large ones sliced
  • 100g cream cheese
  • 100g thick Greek yogurt
  • 50g Davidstow® 12mth or 18mth cheddar, grated
  • 2 tsp chopped dill
  • Zest and juice of 1 lemon

Method

1. Preheat the oven to 200°Cgas mark 6 2. Bake the potatoes for roughly an hour, or until cooked through and a skewer or knife can be inserted easily 3. Halve the potatoes and remove the flesh with a spoon, keeping the skins aside 4. Increase the oven temperature to 220°Cgas mark 7 5. Mix all the remaining ingredients (except the grated cheese) with the scooped out potato and some seasoning, then spoon into the hollow skins 6.
